The Secret to Crispy Bass Skin
The key to perfectly crispy bass skin is threefold: dry the skin thoroughly, use a hot pan, and resist the urge to move the fish. Follow these steps and you’ll have crisp-skinned bass on the table in under 15 minutes.
Method
-
Prepare the fish. Remove your bass fillets from the fridge 10 minutes before cooking. Pat the skin side completely dry with kitchen paper; this is the most important step for crispy skin. Score the skin lightly with a sharp knife (2-3 shallow cuts). Season both sides generously with sea salt and black pepper.
-
Heat the pan. Place a non-stick or heavy-based frying pan over medium-high heat. Add the olive oil and heat until it begins to shimmer, about 2 minutes.
-
Cook skin-side down. Lay the fillets skin-side down in the pan, pressing gently with a fish slice for the first 30 seconds to stop the skin curling. Cook for 5-6 minutes without moving. The skin will turn golden and crispy, and you’ll see the flesh turning opaque from the bottom up.
-
Flip and finish. When about three-quarters of the flesh has turned opaque, flip the fillets. Add the butter and thyme to the pan. Cook for 1-2 minutes on the flesh side, spooning the foaming butter over the fish.
-
Serve immediately. Transfer to warm plates skin-side up, squeeze over the lemon, and spoon any remaining butter and thyme from the pan.
Serving Suggestions
This pairs beautifully with:
- New potatoes and a green salad
- Sautéed samphire (in season June to August)
- Crushed new potatoes with capers and dill
- Simple steamed vegetables with lemon butter
Buying the Best Bass
For this recipe, ask for skin-on, pin-boned bass fillets: we prepare them exactly like this at Parkstone Fisheries, filleting to order rather than cutting ahead. Wild-caught bass has a sweeter, more complex flavour than farmed, and is at its best from June to September. See our seasonal calendar for a full month-by-month guide to when each species is at its peak.
Ready to Cook?
Order whole wild bass and we’ll fillet it for you, or take farmed bass ready-filleted. Either way, ask for it pin-boned and skin-on and it arrives ready for the pan. Available for next-day delivery across all BH postcodes.
