The Storecupboard End of the Counter
These are the jars and packets that do not need planning around. They keep, they need no preparation, and most of them are there to make something else taste better rather than to be the meal themselves.
Anchovies are a seasoning
Good anchovy fillets melt away completely in a warm pan and leave savoury depth rather than fishiness. They are what is quietly happening in a proper puttanesca, a lamb roast, or a Caesar dressing.
Rollmops are ready to eat
Herring cured in vinegar and rolled: no cooking, no preparation, straight from the jar with rye bread and something sharp. A long tradition around the North Sea and an easy thing to keep in.
Squid ink goes a long way
Sold in small sachets because that is all you need. A single sachet will colour and deepen a risotto or a pasta dough for four without making it taste of the sea.
Handy alongside a fresh order
Because these keep, they are the sensible thing to add to a delivery to help clear the £40 minimum without buying more fresh fish than you can eat that week.
