About our cut dry scallops
Dry scallops, cut and trimmed here rather than soaked. Soaked scallops carry water, spit in the pan and never colour properly. These caramelise. We sell them roe on, loose by the 100 grams, so you can buy exactly what a dish needs. Dry them on kitchen paper, season, and give them a minute or so on each side in a very hot pan until golden. They are lovely with black pudding, pea purée or simply garlic butter.
