When Is Rainbow Trout In Season?
Rainbow trout is available all year round.

What Is Rainbow Trout?
Rainbow trout (Oncorhynchus mykiss) is a freshwater fish with pink flesh and a mild, clean, delicate flavour. There is a sweet undertone to it, and it is not overpowering or fishy. That makes it an easy fish to cook and an easy one to serve.
Where Our Rainbow Trout Comes From
Local only. Our rainbow trout is responsibly farmed locally, which makes it an everyday, all-year-round fish. You can see it in the shop as Purbeck rainbow trout.
The Best Time to Buy Rainbow Trout
All year round. There is no closed season to work around, so it is a reliable fish to have on the menu whatever the month.
How To Cook Rainbow Trout
Cook it gently and simply and let the flavour of the fish come through.
Baked whole: Stuff the cavity with lemon, dill and butter, wrap in foil, and bake until just cooked through.
En papillote: Fillets in a paper parcel with white wine, herbs and lemon, steamed in their own juices in the oven.
Pan-fried: Skin-side down in a little butter for crisp skin. Don’t overcook it.
Grilled: Whole or in fillets, under a hot grill with a squeeze of lemon.
Keep the flavours light: dill, lemon, cucumber, a little butter.
